They discern if and how to pursue you, how to be in relationship with you, and if they feel called to marry you.

Catholic girls in my experience are on a really good middle ground. Typically good family, good morals but aren’t going to be as prude-ish as women from other denominations. Now I think that there are a lot of Catholics who practice and believe but they aren’t likely to kick you out of church or suggest she shouldn’t marry you because you’re an Atheist.
They’ll just pray for you and cite the doubting Thomas passages and hope you come around. Now, if you marry in a Catholic church which she’ll likely want you will have to take a marriage prep course and depending on the church and priest you may have to convert. If you think of it merely as an exercise jumping through hoops that is the majority of Catholic belief then you’ll be good to go.
